
Ingredients:
- 300 gr sugar (I usually add a little bit of sugar which has been resting with a Vanilla stick for few weeks)
- 225 gr butter
- 2 egg
- 300 gr oat flour
- 75 gr oat flakes
- (Wal)nuts, chocolate drops, dried plums, or anything else you like 😉
Preparation (10 min):
Add all ingredients one by one, following the order here above. I just smear the dough all over the baking tray (using a reusable baking paper underneath, of course). Then I cut the cookies in small rectangles before they get too cold (if you wait too long, they will break).
UPDATE: I tried to replace 100 gr of cane sugar by 100 gr of dates. It is excellent (but more expensive). I mix the sugar and the dates in the food processor, and add it to the rest.
Bake for min 15-20 min at 175°C (until they are getting light brown).
