This is my daughter’s favorite salty spread. They call it the “chicken-curry spread without chicken”.
It is a very easy recipe and it is excellent on a cracker!
- 1/2 cauliflower
- 2 table spoon of mayonnaise
- 2 table spoon of plain yogurt
- 1 table soon of curry
Steam the cauliflower (about 5 min until it is cooked), let it cool.
Mix all the ingredients together.
This recipe comes from the book from VELT, “lekker gesmeerd”. They also suggest to replace cauliflower with kohlrabi (FR: chou-rave), celeriac (NL: knolselder; FR: celeri-rave) or Jerusalem artichokes (NL: aardperen; FR: topinambour). I didn’t try it yet, but go ahead! 😉
They also suggest to add some chickpeas or lentils once in a while.
